Its preparation

The cultivation of olive trees, their harvest and the entire process is almost all handmade. It begins in autumn with the selection of the olives, when they are at their optimum point of ripeness. We carefully inspect the olive trees, choosing only those olives that are in perfect condition; it's essential to ensure the quality of our oil.

Fruit collection is performed manually and with umbrella system, directly from the tree, so that the olives never touches the ground. They are immediately transported, so that fresh olives in a few hours already in the warehouse, and its processing is initiated before 24 hours have elapsed since its collection.

Once in the warehouse, the olives should be washed and all possible branches, leaves, dust and impurities are removed.

The process continues at the mill, where the olives are ground at low temperatures to preserve its property and ensure its best quality.

From the obtained mass, consisting of oil, water, olive pits and flesh, is extracted the oil by churning and centrifuging systems in which, by density difference, oil, macro and alpechin are perfectly separated. To ensure the quality of the oil and keep their properties, this process is always performed at a temperature below 30 C.

Finally, the oil obtained is filtered to remove any traces of impurities and moisture, and is stored in optimal conditions of light and temperature, so that it reaches the consumer retains all its qualities..
